Garden Salad with Roasted Pickled Beets!

What you can't see underneath this amazing salad is a smear of savory cheese! Then I added all these yummy vegetables - some from our garden and some from the store (that is from someone else's garden).
Recipe (makes 2 salads with extra beets!)
Make these beets:
You may already have your own pickled beet recipe, but this one adds roasted flavor. I love them!
2 Tbl Mascarpone cheese
2 Tbl Neufchâtel cheese
2 Cups of spinach
½ Cup grape tomatoes cut in half
½ Cucumber sliced
1 Crown broccoli roasted
1 Hard boiled egg sliced
1 Avocado sliced
Green onion sliced
Feta cheese
Mix the Mascarpone and Neufchâtel cheese together. Smear a Tablespoon to the bottom of two bowls. Divide and arrange the next 6 ingredients between them. Top with green onion and Feta cheese.
Dress with your favorite Balsamic vinegar or try the one below.
Orange Balsamic Vinaigrette
1/4 Balsamic Vinegar
1/4 Cup squeezed orange juice
2 Tbl honey
1 tsp. orange zest
1/4 Olive oil
Blend all together in a Blendtech twister jar. I use this for all my dressings. You can blend in any blender, just add the olive oil slowly at the end.
