Fresh garden tomato salsa
Equivalent of about 3 cups tomatoes (I used any of my ripe garden tomatoes combined)
½ of onion cut into quarters
1 jalapeno, sliced open and seeded (can use ½ if you want)
2 cloves garlic smashed
1 Cup Cilantro rinsed and big stems removed
Juice of 1 lime
½-1 tsp salt
Place all ingredients in order into blendtec. Power 1 for 3-5 seconds. Can pulse to get desired consistency. Will be a little airy, but the more it is refrigerated it will darken a little and the bubbles will come out.
Ok and just in case you want a green salsa too!!!!
Tomatillo salsa
6 tomatillos rinsed and halved
1 jalapenos seeded and halved
½ onion (white)
Handful of cilantro leaves
1 lime
½ tsp salt
Roast tomatillos, jalapenos and onion at 450 for 15 minutes. (until tomatillos are a little blackened and onion started to cook. Place it all in the blender with remaining ingredients. Pulse to desired consistency. Salt and lime to taste. I like it better chilled.
