New-Baby Meals

I love going to my daughters' home and help them with their brand-new babies. When our newest Grandson was born, Laurel had a great idea to prepare 2 crockpot meals at the same time. One went directly into the crockpot and one straight into the freezer. The frozen one would be taken out at a later date, when they were on their own for dinners. So we did all the shopping for the meals and had a couple weeks worth of meal prep in the fridge and cupboard. (Of course I still ran back and forth to the store for something I forgot or added!) haha!

Most of the recipes were from this Pinch of yum website. (of course I changed up the recipes to suite our taste.) They were all delicious and it was a great idea. I just put the meal together in the morning when there was a free moment (when mom and baby were resting at the same time) and dinner was ready when we were! As the days went along it got too hot in St Louis for crockpot meals. They are great for cooler months, but we made a refreshing Buddha bowl one night. It was a delicious change.
