Orange Sesame dressing Buddha bowl

I don’t know if you can have a bad Buddha bowl. We had a great one last week!

I started with a recipe but made it my own. So here is what I did:


⅓ onion

½ cup red and orange pepper

1 clove garlic

1 tsp olive oil

½ cup quinoa

1 cup water

½ cup red cabbage sliced thinly or in chunks

½ cucumber sliced thinly (I took off the skin because it was sooo waxy!)

Chopped romaine (could use any green-I had some already chopped from the night before)

Avocado

Leftover skirt steak (protein of your choice - Chicken sate would be really good!)


Orange sesame dressing

¼ C orange juice concentrate

3 Tbl grapeseed oil

3 Tbl toasted sesame oil

1 Tbl Tahini paste

3 Tbl soy sauce

2 Table rice vinegar

1 clove garlic


Saute onion in a pan with olive oil. Cooking just a couple minutes. Add garlic and peppers. Cook another minute. Put mix into pan that can hold 4 + cups. Brown quinoa in saute pan. Transfer toasted quinoa to pan with onion mixture and add water. Cook and simmer with lid on for 15 minutes or until all water is absorbed. I stirred it a couple times. Arrange bowls with quinoa and rest of ingredients.

For dressing just blend all ingredients in a small jar of your Blendtec! (I use grapeseed oil because it is a little lighter for a dressing, but you can substitute.) Drizzle it over all in the bowl!!!!
